Blueberry Apple Crumb Breakfast

I try to keep away from sweet breakfasts and go for more greens, healthy fats, and protein. But I will make an occasional exception for a good baked fruit crumb! Each batch can be completely up to you! Just use whatever ingredients on hand. I do recommend a cast iron skillet, so after the apples and berries have stewed you can bake the whole pan in the oven to toast the crumb layer. (We have mostly Lodge Cast iron)

Preheat your oven to 350*F and spray your skillet with either avocado oil or coconut oil lightly.

Fruit layer:

Slice your apples, enough to mostly fill your cast iron skillet. I will use any variety of apple in this recipe, today we had McIntosh on hand. Usually us an 8″ pan, and need about 6 or 7 medium apples. Add 2 TBSP of coconut oil and begin to stew your apples on medium to medium-low heat. Once they begin to soften, add in your berries of choice. You don’t NEED to add berries, but I love the variety of flavors and colors they add. We have some blueberries I froze from the summer and chose those for today. I don’t add any sweetener to the fruit layer, but if you choose to, stir in some honey or maple syrup to taste. Cover and turn down the heat. You will want to keep an eye on them, but you really just want the blueberries to start breaking down and releasing their colors.

Making the Crumb:

I used 1 cup of walnuts, 1/4 cup of hemp seeds, 1/4 cup of flax seeds, a pinch of sea salt, and 2 cups of old fashioned oats. (You can really use any nut and seed varieties! I love using raw walnuts because they naturally contain iodine. We don’t use iodized salt anymore, so I try to make sure we are consuming walnuts in our diet.) Pulse everything in a blender or food processor and pour into a mixing bowl. Add in 3 TBSP of melted coconut oil and 2 TBSP of maple syrup or honey. Mix well until the mixture is clumpy. Spread out evenly over your cooked fruit and place in the oven for 15 to 20 minutes or until your crumb has browned to your preference.

Just a fair warning, when you use blueberries… Be prepared to brush your teeth directly afterwards! #AskMeHowIKnow
