Now that we’ve found the perfect hot chocolate recipe to make at home, it was only natural a marshmallow attempt would soon follow. (Check out our dairy-free hot chocolate recipe!) We have finally started having some winter weather, and a warm mug of hot chocolate is a special treat for my oldest son after he’s helped with the livestock chores. Our high yesterday was only 15*F (-9*C) and today has been around 23*F (-5*C). While we can get much colder around here in January – that’s still cold!
Having some simple, tasty recipes on hand are vital to keep my busy little guy occupied during the long winter months. He loves helping in the kitchen (and loves tasting along the way, too!)

Why make your own?
Store bought marshmallows may be convenient, their ingredients are questionable at best. I prefer making our own so I can control the ingredient quality and the amount of added sugar that goes into it.
Ingredients: Corn Syrup, Sugar, Dextrose, Modified Cornstarch, Water, Contains Less Than 2% Of Gelatin, Tetrasodium Pyrophosphate (Whipping Aid), Natural And Artificial Flavor, Blue 1.

I found a great recipe from The Elliott Homestead. (Find the full recipe in that link!) I received one of Shaye Elliott’s cookbooks (Family Table)several years ago and have been very happy with everything we have tried from them! Luckily we had all the ingredients on hand, and with our new stand mixer, everything came together quickly!
All you’ll need to make your own is:
Gelatin (I prefer Grassfed gelatin)
Maple Syrup
Cold water
What I will do differently next time
For our personal tastes, they were a little too sweet using the called amount. I chose to try them with maple syrup, but may try honey next time. If they still turn out too sweet, I’ll simply cut the sweetener amount down. I skipped tossing them in powdered sugar as recommended. Ours turned out a little sticky but not too bad! The flavor and texture is phenomenal! Passed the toddler taste test and the mommy ingredient test, too!
